Hi Tania, it's possible that letting the shaped rise go on a little longer than necessary might have contributed to your flatter loaves. Shaping a nice, taut surface and a snug shape will also help prevent spreading and encourage your loaves to rise upward rather than spreading out. Check out this video for an alternative shaping method that might work better for you.
