Hi Stephen, you could certainly add some herbs and garlic to this recipe. I would suggest adding roasted, minced garlic. We don't generally recommend adding fresh garlic to bread dough, as this can inhibit the yeast. For the herbs, try adding 2-3 tablespoons chopped fresh herbs or 2-3 teaspoons mixed dried herbs. A combination of rosemary, sage, thyme and oregano would be nice, or you could also use an Italian herb blend. For the garlic, I would add about 2 tablespoons roasted, minced garlic. Please feel free to adjust according to your tastes; this is your bread!
