Hi Rose, the number and size is up to you! It depends on how large you want them to be. Burger buns tend to be around 100 to 120 grams each. Dinner rolls can be closer to 30 t0 50 grams. It's truly your choice. All you would do is weigh your dough. decide how many rolls you want, and divide the amount of dough by that much. You'd see how much each piece would weigh, and if it's about the weight of one of the rolls we just described and that sounds like it's what you're looking for, you can go forward with shaping. If it's too small or too large, you can rework your math to make fewer rolls that are heavier or more rolls that are smaller.
