Hi Jack, these two gluten-free flours are formulated pretty differently (beyond just the xanthan gum), and we don't recommend substituting one for the other. Measure for Measure has more whole grain content and will absorb liquid differently, so we find it works best to stick to the type of gluten-free flour called for in the recipe.
