We're glad you enjoyed this article, Sylvia! You're welcome to bake panettone in a larger pan with shorter sides, this will just make for a loaf that isn't tall as is traditional. Another option would be to try using a standard cake pan and then make taller sides using sturdy parchment paper that has been rolled into a tube. You can use an all metal binder clip attached to the top of the tube of paper to hold it together. We hope this helps!
