Hi, Laura! Maple sugar would function much the same way that turbinado sugar would, so depending on the size of the granules, it could work to varying degrees of success. You could also try adding molasses to your maple sugar if you're looking for the full flavor and texture that brown sugar typically brings. Happy baking!
