I accidently came upon this comment and have to share that Jennie Schacht is my 'yeast water mentor'! I'm hopelessly hooked on YW since Jennie first showed me her bubble water about 6 yrs ago when I was regularly baking Jim Lahey's No Knead with dry yeast. I now have multiple yeast water recipes on my website www.rosemarymark.com and would be happy to chat yeast water any time with readers. Jennie and I often sit on her porch exchanging recent test ideas and bread samples!
