I think I read on one of the recipes, or maybe your starter instructions, that depending on how lively your refrigerated starter is you may have to feed it once after removing from the fridge or you may have to feed twice a day for several days before using. My question is this: if you pull a starter out of the fridge to feed for a recipe, would subbing in yeast water during the feeding give it a boost and get it ready in one feeding? I used yeast water to get my starter going when I made it from scratch. But I keep it in the fridge now to reduce feedings. Would it still give a nice flavor, or would it take away some of the sour? (I've never gotten supremely sour San Fran type results anyways.)
