Hi there, Fin! You do want to use the full 5 cups (602 grams) of all-purpose flour in the dough. It sounds like there might have been an error when weighing the flour which resulted in too much flour sneaking its way into the dough. The autolyse called for in step 2 should also help to hydrate the flour, making the mixing process easier. We hope this helps!
