Hi there, Amanda! We haven't tried using yeast water to jump-start a regular starter, but you're welcome to give it a try! We haven't tested yeast water in gluten-free recipes, but we don't see why it wouldn't work out — check out the tip from our bakers at the bottom of our Gluten-Free Sandwich Bread recipe for details on making a sourdough version!
