I've successfully gotten my water yeast culture to take off – first try, even! I was concerned because I live in a cooler home, but it eventually made it after a few extra days (tip: if you have a pullover or hoodie with a large front pocket, carry your "yeast baby" in there throughout the day to help keep it warm; it worked a charm for my late bloomer).
Such a beautiful smell when it finally succeeded, too! Yeasty with a hint of sweetness and date. I'm excited to get a starter going with it today and try baking with it soon. I'll try to remember to come back and report whether or not I was successful.
Thank you so much for posting this guide! With flour being in such short supply, I had to dry my usual starters and put them in cryo storage. Now I can still make yeast breads even if I can't find a yeast in stock anywhere.
