We have also used barbeque sauce or herb mustard or roasted garlic paste (roast 3 heads of garlic then puree the cloves with 3 tablespoons of olive oil, salt to taste). We recently did an Oysters Rockefeller: made a Rockefeller sauce, used canned oysters (no fresh available), some cheese and sprinkled with herbs when it came out of the oven.
