I want to bake gluten free meat pies. I tried using gluten free pizza dough, and it just wouldn't roll out, and it was very hard to work with. I tried using a one to one gluten free brand, and that was simply awful. I need a soft, pliable dough that will roll out into little patties where I can place the meat filling on, and then pinch them closed in a triangle shape. So would I buy your flour mentioned above and add the xanthan gum? Any suggestions?
