That's a tough one, Amanda! While we don't recommend substituting any gluten-free flour into a regular yeasted recipe, you might consider making these Gluten-Free Cinnamon Rolls as the sweet roll portion of your crispies, and then you could substitute our GF Measure for Measure flour into the cookie portion. This would require using both our Gluten-free All-Purpose flour along with xanthan gum (for the cinnamon rolls), as well as the M4M flour for the cookies, but I think this might yield the best results.
