Hi, Debbie! If you're making a gluten-free yeast bread, you'll want to follow a recipe that's designed specifically to be gluten-free, rather than trying to adapt a wheat-based recipe by swapping out the flours. In this case, you'll want to use the type of flour called for in the recipe, whatever that may be. Best of luck, and happy baking!
