That's a fabulous question, Catherine! We love it when folks put their scientific minds to work in the kitchen. The answer actually has little to do with the structure of the bread at all: the second rise is for added flavor. The more time the yeast has to do its work (within reason), the more delicious your bread becomes. Happy baking!
