Hi Pru, if potato flour isn't OK but potato starch isn't an issue, then either of our gluten-free flours would work. If potatoes as a whole are a problem, our Paleo Baking Flour is an option. Otherwise, we'd recommend finding a recipe to create a gluten-free all-purpose flour blend of your own so you can still control how much xanthan gum goes into your designed-to-be-gluten-free recipes.
