I haven't worked much with gum arabic before, so I checked in with Frank in the test kitchen to see if he had any experience or thoughts about using this ingredient as a replacement in gluten-free baking. He says, "Gum Arabic is typically used as a thickener in liquid systems to improve texture/mouth feel. It might help improve the crumb in GF baked goods, in combination with xathan gum, but it is not a 1:1 replacement for xanthan gum." For best results, we recommend using xanthan gum as called for in recipes, but of course, you're always welcome to experiment if you wish!
