There sure is such a thing as gluten-free sourdough starter, Corrie. Check out our recipe for Gluten-Free Sourdough Starter. It uses our Measure for Measure Flour because it's whole grain and has xanthan gum already added to it. This extra bit of stabilizer helps the starter hold its loft as it rises. We recommend continuing to feed it with our Measure for Measure Flour. Use whatever flour is called for in the final recipe, which usually is Gluten-Free All-Purpose Flour.
