As written more & more people are searching for plant based options. I, however, felt that if this was the actual goal of the article, then it didn't succesfully reach this group of individuals. Strictly speaking, a plant based diet excludes all animal products, including not only meat but dairy and eggs. Removing dairy from a receipe but keeping or increasing the eggs in it was a half-hearted effort at best. As a vegetarian I have experienced little difficulty with baking but I have run into all kind of textural issues when I have attempted to bake for my plant based friends, where I can't simply do what you had done here, which was substitute one animal product for another. While I am sure this article would be helpful for the lactose intolerant, I simply found the opening paragraph to be misleading as none of the receipes presented would actually satisfy a plant based diet.
