Hey Mia! With your starter being only 7 days old, it's awesome that you were able to make this recipe already! It's not abnormal that with such a young starter it didn't rise a lot. It should become stronger with time. If your starter is a 100% hydration starter, as our recipe is, (equal parts flour and water by weight,) you don't have to worry about your starter passing the float test because it's inaccurate with starters of that hydration. It's more accurate with stiff starters. So you'll want to stick with watching the volume changes of your starter to guage when it's ready. It's possible that your loaf could have risen more with more time, or it may have reached its full potential with such a young sourdough starter. More time with consistent feedings will tell.
