Hi Shani, You're correct, there are so many different recipes out there using different ingredients. Cocoa powder is a dry ingredient, so using it requires decreasing the flour, which in turn may cause your cookie to fall apart from a lack of structure, and dryness from the added cocoa. Oil is 100% fat, compared to butter which is about 80%. Oil has more fat, less liquid, giving you a more tender texture. There is no right or wrong way to make a cookie, just different ways. When we write a recipe, all the ingredients are taken into consideration, and amounts are adjusted accordingly. We recommend finding a recipe that uses the ingredients you have on hand, as opposed to trying to adjust a recipe to fit the ingredients you have on hand.
