I am currently researching how different artificial sugars can impact cookies and your experiment was a fantastic start, so thank you. I do have one question, however, regarding the amounts of sugar and artificial sugar used in the recipes. Did you use the same exact amounts of artifical sweetener as the origanal recipes called for normal sugar? I ask because I know when I've used artificial sugars in the past, recipes don't need as much of them as normal sugars. Some artificial sugars do say that they bake cup for cup, but with others, they are a lot sweeter compared to the same amount of normal sugar.
