While I have not tried baking with the Lankanto Monk Fruit, I have replaced it in my coffee with wonderful results. I have never before found something that sweetened without leaving a chemical taste, bitterness, or just generally yuck taste! It's also wonderful on fruit salad and the texture is similar to granulated sugar.
