First, thank you for your pita video with your son (and daughter taping). I love that the family is engaged in your passion as well. There is something so centering about baking (bread for me, not sweets), similar to the feeling I have about organic gardening. Please continue with your videos during this difficult time.
Three questions:
1. What is your Instagram? couldn't find it.
2. How would you define the ratio of water to flour for a stiff vs liquid starter and when using one over the other?
3. In a KA video where you appeared at the beginning, the baker mentioned using part prefermented flour during initial mixing. Then it seemed he added the starter, which I also consider prefermented. Can you explain? (Sorry if terminology is off, not a studied baker - but would love to be)
