I really appreciate this post--the distinctions between these categories had passed me by, although I had wondered if they all meant the same thing. Clearly not! I have been making sourdough bread weekly for the past year or so, based on a KA starter I purchased--seemed like a whim at the time, but quickly became a valued part of my life. I grew up in a household where yeast bread was made weekly, but not sourdough. In my current baking life, because I have worked with starter exclusively, I didn't realize how I could use instant yeast to get complex flavors. I will need to explore these options, even if my passion is for sourdough.
