I have been using a starter that doesn't quit no matter how small an amount is left before feeding it. Potato water seems to be the reason, at least I think so. I have been using it for about three years now. I keep it in the refrigerator between uses. When we are going to have Yukon Gold potatoes for dinner, they are cut up and boiled. I drain and save the water in the amounts needed to feed the starter and freeze. I originally made it with potato water, KA AP flour and 1/8 t. yeast. Used it once, fed it and left it in the frig untouched, unfed for at least a year, maybe longer, I finally pulled it out, fed it again and have been using it monthly to make sourdough rolls ever since.
