I called into customer service a year and half ago to ask about these type of recipes as I had just been diagnosed with diabetes. I immediately began following a Keto diet and managed to reverse the diabetes but needed to continue a Keto lifestyle. The customer service person told me "they didn't have the time to follow all the fad diets that were out there". I was astonished as this was no "fad" diet and has helped me combat a very dreadful disease. I felt King Arthur was really missing the boat and was disappointed with their approach. So it makes me very happy to see the recipes they are now putting forward! Good for you guys.....with your knowledge, who better to develop these recipes?!
