As someone who can't eat gluten, it's good to be able to bake a wide variety with alternatives to wheat flour without feeling deprived. After I had to stop eating wheat I gained a reputation as a baker, always asked to bake for groups because my bakes are so good nobody can tell they are gluten free. Thanks for making that possible.
