Hi Tim, most recipes that call for brown butter will give you the measurement of the amount of butter you need to start with (pre-browning). This should yield the correct amount of brown butter when following the recipe directions for browning. If you happen to see a recipe that calls specifically for an amount of already browned butter, then your approach makes sense.
