Let's say that a recipe calls for four tablespoons of brown butter (56g). Should the measurement of the 56g take place before or after the browning of the butter? It seems to me that some mass is lost in the browning process, I guess, due to evaporation. I've been browning a couple of extra tablespoons of butter in my recipes to make up for the difference, and measuring the butter after browning it.
