Hi there,
I think the substitution depends on whether you have browned the butter previous to the recipe ie were you to brown 250g of butter and add 2 Tbsp water that should work well in most recipes but if you have a container of browned butter already made you would only want to add about 212g of the browned butter plus the same 2 Tbsp water. Butter is about 15% water. I hope that makes sense.
