Hi PJ, great article! I am a huge fan of brown butter, I've been using it in cookies for a long time. I can't wait to start using it more baked goods. I recently discovered something that you may like. If you add enough dry milk powder or buttermilk powder to the pan with the melted butter, you can essentially make a huge batch of toasted milk powder crumbles, which are a great topping for many things, sweet and savory. You just have to add enough to soak up all of the fat in the pan. I haven't figured out exact measurements yet.
