Hi Shari, if you're aiming for chewy bagels, I would encourage you to try either our Chewy Bagels recipe or our Chewy Everything Bagels recipe. These recipes provide a chewier result because they call for higher protein flours, which translate into more gluten development. As far as shaping goes, a larger hole and slightly thinner bagel can also contribute to more chewiness.
