Invariably when we have 4 guests over for a home-made bagel assortment breakfast (topped with Everything, salt, onion, garlic, sesame, poppy and my personal favorite Asiago with Aleppo pepper) someone is looking for the cinnamon raisin or the blueberry. I guess I should make a couple of each, but I don't want a whole dozen of each. At what stage should I remove X amount of dough to add these things?
