I made a batch (12 pcs.) of this Bagel recipe. The taste and chew were fantastic. My only problem is that the shaping and size were not quite what I wanted. I just finished the dough for another batch and it is rising now. I just read your blog about shaping. It looks like I did it correctly the first time but the hole was too large for me. Today I will make only 8 bagels and keep the hole smaller. These bagels are delicious. I don't think I will purchase bagels ever again.
