If you're a bread baker, Celeste, you can be a bagel baker! It's so satisfying to make them at home so I hope you try it. As far as how to place the dough while it's resting, I usually let the pieces of dough rest seam-side up after they're shaped into little dumplings, which is pictured on the lefthand side of the first photo. Then once they're all shaped into dumplings, I flip them over so the seams are down and roll them into smooth balls, one by one (one in each hand, if I'm feeling fancy).
