Weird -- I tried posting a comment eight days ago, but it's never appeared. I was seeking advice, since my pizza dough for this recipe was not showing any "stretch" when doing the four folds, and I was worried my yeast was completely dead & whether it could be salvaged. The next night, when I went to make the pizza, there was some stretch, but it never really rose during the 2-hour rise time. I put some cheese on half (no sauce), and baked it anyway to see what would happen. It was okay, but didn't really rise in the oven, either. I've thrown out the yeast (it was a couple years old -- I rarely bake yeasted breads), and will get more when I think I might have time to try this again. Oh well!
