You sure can use square pans for this, Melissa! The crust may not get as crispy and brown if the pans are lighter in color though. If you'll be making the recipe as written and using two 8" square pans, you'll end up with a thinner crust than shown here — you might consider making a 1 1/4 times batch so that you get two crusts that are thicker.
