Hi Anne, we recommend the SAF Instant Yeast for this recipe. It's different that the brand name "Rapid Rise Instant Yeast" made by Fleischmann's, which we've found gives one good rise and then tends to poop out over time. If you can find Red Star Quick Rise Yeast at your grocery store, this is closer to SAF Instant. Red Star's Premium Yeast would also be a good choice. Active Dry yeast is formulated a little differently and can take a bit longer to rise in this type of recipe. You may also find this article on yeast helpful.
