Hi Sara. With this recipe we were trying to create a traditional Christmas-style Stollen, but we definitely understand how the almond paste might be unfamiliar to some. If you wanted to keep this recipe, you could leave it out, but make sure to keep an eye on the bake time, as it will bake a bit quicker. We do also have a different Stollen recipe that does not use almond paste, so maybe also have a look at that and see if it seems more like the one you're used to.
