Hi Denise, I didn't try baking this dough in a doughnut pan during testing. I think the center flute might cause some problems. You'd essentially end up with an empty center hole on the bottom. If you want the cinnamon rolls to look less muffin-like, consider baking them in a mini pie pan. They'll spread a bit more and have a more conventional look. Good luck!
