Hi Carol, because this cake is meant to be baked in a 9" cake pan, the baking time will be a little tricky in smaller, deeper loaf pans. I think it would work, but it's hard to say what the optimal baking time should be. For more predictable results you might want to look for mini disposable cake pans meant for gifting. Be sure to grease the pans well and fill about 2/3rds full. I'm guessing smaller loaves will take about 20-25 minutes, but we always recommend checking early and often when you switch pan sizes. You may also find this recipe helpful, which is geared for smaller gingerbread loaves.
