Hi Jenn, since this recipe calls for a 9" square baking pan, you're not going to be able to fit all the batter in your 8" round cake pan. You could fill the pan about 2/3rds full and make a muffin or two with the remaining batter, or multiply the weight of each ingredient by .62 to get a reduced recipe that should fit nicely in your 8" cake pan. Baking time will likely be a bit shorter, but the depth of the cake should be similar, so I would start checking at 20 minutes, and reset the timer from there.
