Hi Susan! Aside from baking this recipe to the appropriate color (sugar caramelizes and darkens as it bakes), you can also consider the coloration coming from the grade of molasses used (if you are using a lighter molasses this will affect the final color). Lastly, if you end up using water instead of the coffee called for in the recipe, then you can expect a lighter color in the final product. Happy baking!
