That sounds interesting, Kathryn! We don't have anything like that but maybe someone else will see your comment and share. Putting a pastry or cookie bottom under cakes is common in Europe (and gingerbread is very common in Europe) as it made it easier to serve slices and added texture, so it makes sense that a lot of people would consider it to be an authentic essential!
