I've had to cut butter drastically in my baking due to a need to keep saturated fat consumption below 11 g per day. Could this gingerbread be made with 1/3 cup oil in place of the butter?
I wish that King Arthur would offer more dessert recipes that do not rely on butter, particularly at this time of year, when I yearn to bake cookies.
