Hi, Frank. The answer depends on what kind of flavored sugar you're making. If you're using something like fresh herbs or citrus zest, both the color and flavor will diminish after about a week. Any sugar that's infused with fresh ingredients should be used relatively quickly. Sugar infused with things like vanilla beans or coffee beans have a much longer window to use them within; they can be stored for up to a few months. For sugars that use dried flowers (rose petals, lavender, etc.), store the sugar for up to a month. Happy baking!
