Hi Jill S, we wouldn't recommend substituting potato flour for the mashed potatoes in this recipe. However, for a short cut you could consider preparing the mashed potatoes with instant potato flakes (according to package directions). Adding instant mashed potatoes in this way should work fine, just be sure that they've cooled down sufficiently before adding to the recipe.
