Hi Carole, you certainly could, but some adjustments will be necessary. This blog post has some great tips on how to substitute liquid sweeteners in various baking projects. For this particular recipe I would consider substituting 1/4 cup of honey for the 1/3 cup granulated sugar called for. I would also reduce the water by one tablespoon. Keep in mind that baked goods made with honey tend to brown up a little faster, so you may find you need to tent the rolls lightly toward the end of the baking time.
